The first couple of weeks of September are hectic no matter your circumstances.  Back to routine after a summer of breaks, short weeks, vacations, and parties.  Might be that you have to get the family back into routine, or you are back to school yourself.  For me, I was in school for so long that September will always be the start of Fall Semester, and bring with it all those feeling of busy-ness.

The key to navigating times like this is preparation.  If you had the chance to meal prep on the long weekend, and you got everything set and ready.. You are a ROCKSTAR!! But.. if you are like most of us, you are scrambling right now just to make it to your next shot of java, and keep up appearances.  So, you need quick and easy meal ideas.  Ones that also don’t generate piles of dishes.

I stumbled on this little gem a while ago, and its been a hit for EVERYONE I’ve made it for so be warned that you may have to double the recipe!  ” Buffalo Chicken Casserole” from the PaleoOMG page and its made with spaghetti squash so with a side salad, you have a full meal, and one dish to wash.  Don’t be put off by the amount of hot sauce in there (I use Frank’s, and its less than $8 for 2 bottles at Costco).  The squash really soaks up the heat, and if you really don’t like spice, just dial it back a bit, or add a touch more mayo.
